I love my CSAs... but...
Nov. 6th, 2008 06:12 pmWe've enjoyed our summer CSA from Ridgeland Harvest so much that we decided to sign up for a winter CSA (it's only 8 weeks). However, we decided to go with Primrose Farm because they are in Verona rather than practically on the other side of Wisconsin. But we made a critical error. The Primrose Farm division between the summer CSA and the winter CSA was last week, while the division between the Ridgeland Harvest summer CSA and winter CSA is not for another 2 weeks. Yeah, seriously. We have a lot of vegetables. Where by a lot, I mean a lot. We brought home 45 lbs of vegetables last week, and then there was the backlog we already had.
Anyway, that brings me to a question. What the heck do you do with carrots? Like, a lot of carrots. One of our two vegetable drawers in the refrigerator is almost entirely filled up with carrots. I know they keep a long time, but this is ridiculous. What can we do with them to make them last until we want to eat them, and while we are at that, how should we prepare them so that we will want to eat them at all? Suggestions? Recipes? Armies to feed?
